Maria’s Bruschetta, Cath Edvalson


This is so good, you can’t stop eating it—and you’ll be wishing you’d planned it for your entire meal. My sister-in-law. Maria. makes this recipe every time we come to visit her in New Hampshire, and by the time it’s time for dinner, we’re so full from the bruschetta, it’s hard to eat what’s planned!

4-6 Roma tomatoes
1/4 red onion
1 jar (16 oz.) marinated mushrooms
1 jar (16 oz.) marinated sweet red peppers
1 small jar capers
1 handful fresh basil, chopped
1/3 c. olive oil
1 tsp. white vinegar

Chop tomatoes finely and let juices drain. Chop onion, mushrooms, and red peppers, and layer them one at a time in a glass container or jar. Additionally layer capers, basil, and tomatoes. Pour olive oil and vinegar over the ingredients and allow to marinate for a couple of hours. To serve, stir together and place on toasted French bread.

SUPPLIES:  Cardstock: (kraft) Bazzill Basics Paper  Patterned paper: (Winter Birds, Winter Star from Winter Garden collection) Creative Imaginations; (Learn from Color Me Silly collection) Basic Grey  Rubber stamps: (swirl, small circle, large circle from Petals set; frame from Story Boards set) Inque Boutique  Pigment ink: (brown) Clearsnap  Accents: (chipboard tile) Deluxe Designs; (chipboard swirl) Fancy Pants Designs; (clear rhinestones) EK Success  Rub-ons: (French Twist alphabet) Autumn Leaves  Fibers: (rust grosgrain ribbon) Morex Corp.  Font: (Porcelain) www.dafont.com  Tools: (decorative-edge scissors) Fiskars; (3/4" circle punch)  Finished sizes: tag 3" x 5", lid topper 2 3/4" diameter

1 Cut tag from cardstock; stitch edges. 2 Ink edges of patterned paper strip; adhere. 3 Cut cardstock strip to fit right side of tag; cover with patterned paper. 4 Trim patterned paper and cardstock strips with decorative-edge scissors; ink edges and adhere to piece. Stitch edges and zigzag-stitch seam. 5 Adhere piece to tag; ink edges.

1 Stamp large circle on cardstock; cut out and adhere. Punch circle from cardstock; ink edges and adhere..2 Stamp swirl and small circle on patterned paper; cut out and adhere. 3 Cover chipboard tile with patterned paper; ink edges and adhere. 4 Stamp frame on patterned paper; trim. Straight-stitch edges and zigzag-stitch top. Apply rub-on and adhere. 5 Print ‘ruschetta’ on cardstock; trim. Ink edges and adhere. 6 Cut paper loop; adhere to tag. Adhere rhinestones.

1 Cut circle from patterned paper to fit lid; ink and stitch edges. 2 Cover chipboard flourish with patterned paper; adhere to circle. Adhere rhinestones. 3 Adhere topper to jar lid. Thread ribbon through paper loop on tag; tie around jar.
