Three Cheese Chicken Casserole Alisa Bangerter

 

I adapted a recipe I found to make this casserole. My son loves pasta so I was trying to find something that would be a quick one-dish meal that would also feed a growing teenage boy! I also needed a good recipe to take to neighbors or pot-luck dinners and this one worked perfectly.

INGREDIENTS
2 tbsp. butter or margarine
1 small onion, chopped
1/2 c. chopped green pepper
2 cans (10 3/4 oz. each) cream of chicken soup
1 can (8 oz.) sliced mushrooms 
1 jar (2 oz.) chopped pimentos
1/2 tsp. dried basil
1 package (8 oz.) egg noodles, cooked and drained
3 - 4 c. cooked diced chicken
2 c. grated cheddar cheese
2 c. cottage cheese
1/2 c. grated Parmesan cheese
dried bread crumbs (optional)

DIRECTIONS
Sauté onion and pepper in butter or margarine until tender. Remove from the heat and add soup, mushrooms, pimentos, and basil. Set aside. Mix together noodles, chicken, cheddar cheese, cottage cheese, and Parmesan cheese. Pour soup mixture over noodle mixture and combine well. Note: Amount of soup can be adjusted if you want the casserole more or less saucy. Pour into a greased 9" x 13" baking dish. Bake, uncovered, at 350 degrees for 45 minutes or until bubbly. Sprinkle with bread crumbs, if desired, and bake 10 minutes longer.

Yields approx. 10 servings

SUPPLIES:  Cardstock: (Natural Smooth) Prism  Patterned paper: (Sheriff, Bull Rider, Chaps from Cowboy collection) Crate Paper  Rubber stamps: (welcome baby, giraffe from Baby Love set) Cornish Heritage Farms  Dye ink: (Linen, Mushroom, Pitch Black) Ranger Industries  Color media: (tan, blue markers) Copic Marker; (tan chalk) Pebbles Inc.  Paint: (white) Making Memories  Accents: (silver round, silver star brads) Making Memories; (acrylic star)  Fibers: (blue gingham ribbon) Stampin’ Up!; (brown floss) DMC  Tool: (circle cutter)  Finished size: 9 1/4" x 4"
 
1 Make card from cardstock. 2 Ink edges of patterned paper strips; adhere. Stitch along seam with floss. 3 Paint acrylic star; let dry. Adhere. 4 Stamp welcome, baby, and giraffe on cardstock. Color with markers and chalk. Cut out with circle cutter; chalk edges. 5 Mat with patterned paper. Adhere ribbon, attach brads, and adhere.

Designer Tip
Acrylic shapes stand out better when brushed with a bit of paint, sponged with ink, or stamped.

Bonus Idea
Make a train of animals by attaching a series of animals on brad “wheels,” linked together with ribbon.
